Banana and Egg Pancakes

Soft, fluffy and easy to make with just a few ingredients. A delicious way to enjoy eggs for breakfast or as an afternoon snack.
Ingredients — Serves 2
2 eggs
1 ripe banana
80 g rolled oats or oat flour
60 ml milk
½ teaspoon baking powder
A pinch of cinnamon (optional)
A little oil for the frying pan
To serve
Fresh fruit
Natural yoghurt
Honey (optional)
Method
Mash the banana with a fork until smooth.
Add the eggs and mix well.
Stir in the oats, milk, baking powder and, if desired, a little cinnamon.
Mix until you have a smooth batter and leave to rest for 5 minutes.
Heat a non-stick frying pan with a little oil.
Spoon small portions of batter into the pan and cook over a medium heat for 1–2 minutes, until small bubbles appear on the surface.
Flip the pancakes and cook for approximately another minute.
Serve the pancakes warm with fresh fruit, yoghurt or a drizzle of honey.
💡 Tip
Use a very ripe banana: it will add natural sweetness and help make the pancakes softer and fluffier without the need for added sugar.
