Spinach and Cheese Omelette

Soft, creamy and full of flavour. A delicious twist on the classic French omelette, perfect for one person, combining fluffy eggs with a filling of tender spinach and melted cheese.

Ingredients — Serves 1

  • 2 eggs

  • 50 g fresh spinach

  • 30 g melting cheese (such as mozzarella or Emmental)

  • ¼ onion (optional, finely chopped)

  • Extra virgin olive oil

  • Salt

  • Black pepper

Method

  1. Wash and drain the spinach thoroughly. If using onion, finely chop it and gently sauté in a little olive oil until soft. Add the spinach and cook for approximately 2 minutes, until wilted, then drain off any excess liquid. If not using onion, simply sauté the spinach for a couple of minutes.

  2. Beat the eggs in a small bowl with a pinch of salt and black pepper.

  3. Heat a small non-stick frying pan over a medium heat with a little olive oil.

  4. Pour in the beaten eggs. When the base begins to set but the surface is still slightly creamy, arrange the sautéed spinach and cheese over one half of the omelette.

  5. Using a spatula, carefully fold the omelette in half, enclosing the filling.

  6. Cook for a few more seconds until the cheese has melted, then transfer to a plate. Serve immediately, ideally with a slice of toasted bread and a small fresh salad.

💡 Tip

For a perfectly tender and creamy omelette, remove it from the heat while the centre is still slightly soft. The residual heat will finish melting the cheese without drying out the eggs.
